Homemade burgers

I made burgers yesterday. A whole batch that I froze in between sheets of nonstick aluminum foil. Turned out pretty well, if I do say so myself. I used two different "fat grades" of beef: 93% lean and 73% lean. (I really should have used fatty beef (the 73%) and ground veal, but the local Safeway does not sell ground veal, and I didn't feel like driving to a specialty market just to get some.)

To the almost 3 pounds of beef I added one small Vidalia onion (finely chopped), 3 cloves of garlic run through a garlic press, two eggs, two teaspoons of salt (yes, I like salty food!), a teaspoon of freshly ground black pepper, and multiple dashes of worcestershire sauce and Lawry's Seasoned Salt.

Mix, mix, mix, mush, mush, mush. All by hand. The beef was cold. Fucking cold! Had to run my hands under hot water a few times to avoid frostbite. Haha. Made big patties (from globs of meat the size of racquetballs). Cooked up 3 of them on my panini press. YUM.
